The name ‘Tomares Ballus’, explains Sebastien, refers to a type of butterfly which had disappeared from its native Provence some time ago. It reappeared in Correns not long after the town became organic. Many credit the butterfly’s return to the careful farming of the community. This is an elegant, rosé, showing purity fruit above all else. Beautiful bright pale pink colour with small raspberry fruit and pear drops on the nose and palate. There is a roundness to the palate which provides structure and balance to the bright finish.
